Adam’s career highlights include his first restaurant, multi award winning Zucca Greek Mezze established in 2003; and in 2015 becoming Executive Chef at at LOT.1 Sydney, a three level venue on 18/20 York St in Sydney’s CBD with a focus on quality spirits, as well as contemporary Italian dining.
Extending his passion for food, Adam has also been a regular chef on TEN’s Ready Steady Cook, Everyday Gourmet, Good Chef, Bad Chef and Seven’s Out of the Blue.
In May 2017, Adam was the host of the TV series, Adam’s Pasta Pilgrimage, a thirteen part television series that explores the origins of Italy’s most famous food: pasta. With the support of San Remo, Adam travels in his little red Fiat, Louis, meets authentic Italian people and cooks authentic Italian recipes.
More recently, Adam Swanson has partnered with Barossa Weintal to bring a brand-new restaurant in Tanunda, Barossa Valley. Featuring the best local ingredients, all served in a modern, relaxed, family-friendly environment and most importantly well priced.
As well as the above experience in running multiple restaurants around Australia, Adam currently focuses his time running his very successful consulting company which involves assisting restaurants/hotels improve or setup their restaurants and food offerings including Menu Engineering. Adam is keen to utilise local produce where possible to drive regional food tourism.
